We have a love hate relationship with strawberries. Some of my favourite memories are calling into the strawberry farms on our way home from a family holiday or even better on the way TO a family holiday and taking with us kilos of freshly picked strawberries ready to use in delicious strawberry recipes. We love to eat them so why the hate? Sometimes the price depending on the season and other times you get them home and they are instantly already over ripe. I can’t do anything about the price but I have found a solution to the over ripe!
These containers from Sistema are the best! They caught my eye in the supermarket a couple of weeks ago but at $10 for one container eeek – I kept walking. However when they came on special, I nabbed two. We have bought six punnets in the last two weeks and so far haven’t thrown out one strawberry.
How do they work?
The strawberries are kept elevated on a tray which keeps the moisture away and helps circulation which stops them from spoiling so quickly. Our strawberries are easily lasting 5 days which they haven’t in the past. The largest size container fits about 3 punnets which is perfect for right now with strawberries in season and being so cheap. Even so when the price rises, it will be good to know they are going to last.

1. Raw strawberry slice

This raw strawberry slice is a great start to the collection. While it takes a little time as it’s best made a day ahead, it is well worth planning. Filled with dates, almonds, pistachios strawberries and coconut cream not only is it yummy, it looks so pretty sliced up.
2. Fresh strawberry water

Depending on how sweet you like your drinks, I find you can cut the sugar back in this. I also like to use the cordial and add it to sparkling mineral water rather than plain water too.

With one of our girls choosing to eat dairy free when possible we were on the hunt for a home made dairy free option for icecream. This one ticks all the boxes! We add in our own homemade jam. It turns out lovely and creamy.

Love this version of strawberry salad by Sharin of Pretty simple sweet. If you don’t want to make the dressing I would recommend just a good sprinkle of balsamic vinegar instead. I swap out the blue cheese or goat cheese due to allergies but we use feta. The combination of strawberries, creamy cheese and balsamic is divine!
5. Strawberry jam

Jam is a great way to use up an over abundance of fruit. During strawberry season our local fruit store sells trays of strawberries for as little as $5. That’s my favourite time to make jam. The good thing about Savannah’s take on strawberry jam is that it’s not super sweet like a traditional jam that uses sugar to make it ‘jel’. It’s lovely topped on yogurt and granola too or add it to your scones with cream or into your dairy free ice-cream!
6. Strawberry cake

Shiran’s Simple strawberry cake recipe is so good. It uses easy ingredients you are most likely to have in your pantry already. The hero of this recipe is of course juicy sweet strawberries but it’s the lemon zest and lemon juice that brings an extra depth of flavour. Grab a punnet of strawberries and give this one a try, I promise you won’t be disappointed. Sharin also recommends vanilla sauce to go with but I recommend chantilly cream or vanilla bean yoghurt.
7. Strawberry shortcake

Every time I see a recipe for strawberry shortcake I think of the character that was popular in the 1980s. I had a strawberry shortcake dress which I thought was the best thing ever. So to me strawberry shortcake is just a fancy way of saying scones with jam and cream. Either way, this recipe by Julie from Lovely Little Kitchen is fabulous. The trick to her scones (biscuits if you aren’t from Aus or the UK) is buttermilk.
8. Berry thickshake

There is nothing better than a super fast thickshake or smoothie. This one is just three ingredients berries, milk and yoghurt. Blend, blitz or throw it in your thermomix. Perfect for after school to tide you over to dinner or before church when you don’t have time to make breakfast.

When I was young my Grandma used to run a patisserie. One of my favourite jobs was putting the strawberries on top of little tarts. Here is the closest version I can find to what she used to make. She would also add a goodly splash of grand marnier to the cream cheese custard and brush the cases with dark chocolate.

I am a sucker for our local bakery scones – they have a blueberry and white chocolate version that I have on probably too many occasions. But this recipe is even better. Jo’s secret ingredient is buttermilk and she has a lemon and blueberry version too. I am afraid I cheat making mine and make the dough in the thermomix.
